If I knew that I would be a game developer now wouldn' t I?
But there are games that manages to combine simplicity with complexity in a pretty good way. Gears of War being the most recent one that comes to mind.

Ah, Metroid Prime is a perfect example. The concept is a simple adventure/explorer game in which you shoot enemies. You can play the game that way if you like.
But by adding different energy weapons, upgrades, scanning options and puzzles, the user can make the game as complex as one would want depending on how much one uses the other elements of the game.
The morph ball is also a very simplistic idea, but once it comes into use in Metroid Prime it offers a lot of complexity.

On the Wii the Wii-mote will offer more simplicity in controls, but the gameplay will still offer the complexity of previous games.

Maybe that' s why many people are bored by Metroid Prime. They only see the simplistic (sometimes called boring) surface of the gameplay and never takes the time to discover the complexity that the player needs to find for himself.
